A good bottle of “Offida Rosso” will surprise you with its strength and elegance. It is an important wine that should be left to “breathe” for at least an hour before tasting.

It is also an excellent meditation wine and is definitely the best choice to go with the typical Marche and Ascoli Piceno cuisine: starting, for example, with the tasty variety of cold cuts that this land offers and of course the famous stuffed olives, but also the pulse soups of rural tradition, pasta with livers, Lasagne and then beans with rind, mixed roast meat, mixed fries of Ascoli with lamb chops and sweet cream.

We would like to recommend a typical recipe from the town of Offida (or perhaps introduce it to you, if you have never tried it before). It has a catchy name and an authentic taste; it is called chicken (or rabbit) “'ncip 'nciap”, pan-fried with oil and pounded with lard, softened with white wine, flavoured with sage, rosemary, garlic (with skin), pepper or Chilli peppers and pieces of tomato added towards the end of the cooking process.
